Rick Stein at Bannisters reflects Rick's passion for seafood and the coastal lifestyle which he has enjoyed for most of his life. As he says: "nothing is so exhilarating as fresh fish, simply cooked". While he enjoys occasional fine dining, his food is much more about what he really likes to eat ... a plate of Clyde River oysters, a pot of Illawarra prawns with mayonnaise, a mound of spanner crab, a slice of blue eye or a perfectly grilled sand whiting. Fully licensed with one of the finest wine cellars in the area, you can relax and dine on the deck outside and enjoy ocean views from the elegant light-filled space.

OCEAN DELUXE ROOMS

Ocean Deluxe rooms feature a queen size bed, private balcony and ocean views. Available on the ground or first floor. Other inclusions are air-conditioning, STD/ISD telephone, plasma TV, DVD, Austar, mini bar, bathrobes, separate bathroom with shower, plus coffee and tea facilities.

SPA RETREAT ROOMS

Spa Retreat rooms have all the comforts of the Ocean Deluxe rooms. They are also complimented with a double spa bath either in the bathroom or on the ocean view balcony. Two rooms have private jarrah decks. All have a king bed, plasma TV, DVD, Austar, bathrobes, air-conditioning, STD/ISD telephone and mini bar. Some have a separate shower, while others have a shower over the spa.

LUXURY SUITES

Luxury Suites have breathtaking pool and ocean views plus separate living and bedroom areas, or a large open plan design. Additional features include a king size bed, plus either double roman bath, fireplace or double spa in your bathroom, air-conditioning and plasma TV. Three have a large double balcony and one has a large deck. All also include DVD, Austar, bathrobes, STD/ISD telephone and mini bar.

COURTYARD SUITE

The Courtyard Suite is large at 70m2, with king size bed, large open living area with private small enclosed terrace. The generous bathroom is complemented by a large double spa. Additional features include air conditioning, plasma TV, DVD, STD/ISD telephone, bathrobes, mini bar and coffee and tea facilities.

TERRACE SUITE

The Terrace Suite has a king size bed, large living area with Plasma TV, coffee and tea facilities, mini bar, double spa in a large bathroom with separate shower. It also has a private garden terrace (30m2) with plunge pool. The ocean view is limited to across the top of the lodge.

COLLETTE DINNIGAN PENTHOUSE # 29

Instantly relaxing with the sound of waves crashing. Walking into the living room, past the kitchenette and large trestle style table, you have uninterrupted ocean views with comfortable linen sofas, handprinted cushions by textile designers such as Kathryn Ireland, Penny Morrison and Carolina Irving, a wool rug by Vaughan, a fireplace with marble mantle, oak wooden floorboards, wooden shutters and doors.

The bedroom features Schumacher fabrics, brass Aerin Lauder wall fittings and a chair Collette bought in the South of France hand-covered in velvet. The bathroom is luxurious featuring handmade vanities with Carrara marble tops, Perrin & Rowe tapware, a sizable bathtub and shower, and heated floors. There is also a separate powder room. Australian photographers and artists who have an emotional connection to the water are featured throughout — such as Murray Hilton and John Witizg’s 1970s surf nostalgia. Both suites have a collection of botanical and coral sea life sourced from the French markets, as well as charts from Collette’s family’s sailing journeys across the Indian Ocean. The balcony offers customised cane furniture in a relaxed setting for two.

COLLETTE DINNIGAN PENTHOUSE # 30

Now accessed through a private hallway adorned with John Witizg’s nostalgic Australian surf photography from the 1970s. Walking past a kitchenette and large dining table into the living room you have stunning ocean views towards the east, and north towards Jervis Bay. Comfortable linen sofas, handprinted cushions by textile designers such as Kathryn Ireland, Penny Morrison and Carolina Irving, wool rugs by Madeline Weinrib and Robyn Cosgrove, a fireplace with marble mantle, wooden oak floorboards, then past wooden shutters and doors onto an extended balcony with antique Indian day bed filled with cushions, two sun lounges and customised cane furniture.

The bedroom features Schumacher fabrics, custom lamps and a chair Collette bought in the South of France hand-covered in Belgium linen. The bathroom is pure luxury featuring handmade vanities with Carrara marble, Perrin & Rowe tapware, a sizable bathtub and shower, and heated floors. There is also a separate powder room. Australian photographers and artists, such as Martine Emdur and Hugh Stewart, who have an emotional connection to the water and the landscape are featured. Both suites have a collection of botanical and coral sea life sourced from the French markets, as well as charts from her family’s sailing journeys across the Indian Ocean.

THE CAMERON KIMBER PENTHOUSE

The Cameron Kimber Penthouse is the ultimate getaway with luxurious style, outstanding features and the most amazing ocean view.

With large living spaces, beautifully appointed bedroom, private Hamman steam room and media room. 243m2 of internal space, 55m2 of deck on the eastern side plus a 41m2 roof garden.

  • Loved this place, what a stay! Stayed for 3 nights but wish we could stay longer! Stayed in a luxery suite and the room was spotless, views incredible and the staff wonderful. The pool and bar was fab, the bed huge and comfy and the deck was great. Loved looking out of bed at the ocean and the sound at night was spectacular. This place was fabulous.
